Our beers.

All of our beers are brewed with locally sourced ingredients, capturing the spirit of seasonality and place. We proudly support local farmers and land stewards who recognize the value of being rooted, working sustainably, and preserving the uniqueness of our regional culture and ecology.

Year rounds.

Nebulae (4.2%) - Berliner Weisse style ale brewed with Pilsner and wheat malts. Conditioned with wildflower honey from our apiary. Seasonal variations feature fruit and herbs.*

Saison Millefleur (varies)- A blend of koelschip and barrel aged saisons, conditioned with seasonal foraged and cultivated herbs. Previous versions have included blue basil & sage, lemon verbena & lemon balm, and wild chamomile.*

Table Saison (4.5%) - Session Saison brewery with Pilsner malt, Rye malt, and raw wheat. Fermented with our house yeast culture. Dry hopped with a variety of local hops.*

Seasonal & Limited Availability.

Willow Wolf (4.2%) - Farmhouse ale brewed with floor malted Pilsner malt, oats and raw wheat. Dry hopped with Cascade, Centennial, and Chinook hops.*

Picea (6.4%) - Scandinavian farmhouse style ale brewed with pale malt. Fermented with Kviek yeast. Conditioned with foraged spruce tips and dry hopped with Centennial hops.

Persica (6.8%) - Blended mixed-culture saison brewed with Pilsner, rye and wheat malts. Conditioned on fruitwood smoked peaches.

Saison Prunus (6.8%) - Blended mixed-culture saison brewed with Pilsner, rye and wheat malts. Conditioned on foraged wild American plums that have undergone carbonic maceration.

Rothe (5.9%) - Flander’s style red ale conditioned on a blend of sweet and sour cherries that have undergone carbonic maceration.

Gaudium (4.9%) - Farmhouse ale brewed with raw wheat, Pilsner and oat malts. Trifoliate orange, ginger and coriander were added to the Koelschip. Fermented with a farmhouse yeast strain provided to us by a Belgian brewery.*

Kobalos (4.4%) - 100% Brett fermented farmhouse ale, dry hopped with Nelson Sauvin.*

Shadows & Unicorns (10.5%) - Bourbon barrel aged Brett Tripel brewed with 100% floor malted Pilsner.*

Saison Malus (varies) - Mixed culture, oak aged, solera saison brewed with Pilsner malt, rye malt, and raw wheat. Blended with spontaneously fermented cider (the blend of apples changes with each release).

Tettix (7.5%) - French style Bier de Garde brewed with floor malted Pilsner and crystal malts. Open fermented with our house saison yeast.*

*beers featuring an asterisk pass through our koelschip and are exposed to wild microbes. they have varying degrees of acidity and wild fermentation characteristics.
